A typical French dessert where thin apple slices are bound by a minimal batter, creating a creamy, moist texture that is almost 'invisible'.

Method

  1. Peel and slice the apples into very thin slices. Transfer to a bowl and add lemon juice. Set aside.
  2. In a separate bowl, whisk together eggs, sugar, a pinch of salt, generous cinnamon, vanilla extract, and lemon zest.
  3. Add milk and melted butter to the mixture and stir.
  4. Sift in the flour and baking powder and mix until smooth.
  5. Pour the batter over the sliced apples and mix well with your hands.
  6. Transfer the mixture to a baking pan lined with parchment paper. Level the surface and sprinkle with brown sugar.
  7. Bake in a preheated static oven at 180°C (350°F) for about 40-45 minutes.
  8. Let the cake cool completely, then dust with powdered sugar before serving.
