A traditional Emilian rice cake made with just rice, milk, eggs, and sugar, flavored with citrus zest and liquor.

Ingredients
9 items- 800 mlMilkwhole milk or any plant-based milk
- 1/2 pcsOrange Zestzest of half an orange
- 1/2 pcsLemon Zestzest of half a lemon
- 150 gRiceshort-grain rice (risotto rice or similar)
- 150 gSugar
- Salta pinch
- Orange Cognacor rum, or Sassolino liqueur
- 3 pcsEgglarge eggs, beaten
- Powdered Sugar(optional) — for dusting (optional)
Method
- In a pot, combine the milk with the orange and lemon zests. Bring to a boil.
- Add the rice and sugar, and cook until thickened, about 15 minutes or according to the rice package instructions.
- Add the liquor (cognac all'arancia or rum) and stir.
- Remove from heat, discard the citrus zests, and transfer the mixture to a bowl. Let it cool to room temperature.
- Once lukewarm, beat the eggs and incorporate them into the mixture with a whisk.
- Pour into a baking pan lined with parchment paper.
- Bake in a static oven at 180°C (350°F) for about 40–45 minutes.
- Let the cake cool completely before serving. Optionally dust with powdered sugar on top.
