A delicious Italian bread cake made with stale bread, amaretti cookies, raisins, almonds, and cocoa, topped with pine nuts and powdered sugar.

Ingredients

- 250 gStale BreadCut into cubes
- 100 gAmarettiCoarsely crushed; can substitute with other dry biscuits
- 50 gSultanina RaisinsSoaked in water for 30 minutes

- 100 gCane SugarDivided: 50 g for yolks, 50 g for bread mixture
- 1/2 tspGround Cinnamon(optional)
- 1 pcsVanillina1 packet; can substitute with vanilla extract
- 400 mlMilk
- 8 gBaking PowderBaking powder
- Rum (o Maraschino)Half a small glass (approx. 1.5 tbsp)
- 30 gPine NutsCan substitute with chopped hazelnuts, walnuts, or almonds
- 50 gButterSemi-melted
- 1 pcsOrange ZestZest of one orange
- 30 gUnsweetened Cocoa Powder(optional) — Omit for a white version; add candied fruit instead
- Powdered SugarFor dusting the finished cake
Method
- Separate the eggs; place the whites in one bowl and the yolks in another.
- Soak the raisins in water for at least 30 minutes.
- Pour the milk over the stale bread cubes, add the brown sugar, mix, and let soak for 10-15 minutes.
- Blend the bread-milk mixture with an immersion blender until creamy and smooth.
- Whip the egg whites to stiff peaks (no salt or lemon needed).
- In a separate bowl, beat the egg yolks with half the brown sugar (50 g) until pale, then add the semi-melted butter and beat for about 2 minutes until creamy.
- Fold the bread-milk mixture into the yolk-butter mixture with a spatula.
- Add the almond flour and mix gently.
- Add vanilla (or vanillin), cinnamon, and the rum or maraschino, then mix.
- Crush the amaretti cookies coarsely (not into powder) and add them to the batter, mixing.
- Add the unsweetened cocoa powder and mix until incorporated.
- Add the baking powder and grated orange zest, then mix.
- Fold half of the whipped egg whites into the batter gently, then fold in the remaining whites carefully to keep the mixture airy.
- Butter and flour a cake pan.
- Pour the batter into the pan and sprinkle pine nuts evenly over the top.
- Bake in a preheated oven at 170-175°C for 40-45 minutes, or until a toothpick inserted comes out clean.
- Unmold the cake onto a serving plate and dust generously with powdered sugar.
