Method
- Prepare the sweet soy reduction: In a pan with a drizzle of oil, caramelize the onion over medium-high heat. Add a splash of vinegar, some sweet soy sauce, and some sugar. Let it reduce.
- Sauté the asparagus: Crush a clove of garlic and add to the pan with some chili. Add the asparagus, salt, and cook for 1-2 minutes.
- Prepare the wafer: Mix flour, oil, water, and a little food coloring. Pour into a hot pan over medium heat and cook until crispy and coral-like.
- Sear the tuna: Coat the tuna with a drizzle of oil and sear in a pan for about 30 seconds per side, keeping the inside raw.
- Plate: Place the caramelized onion on the base, top with the tuna, add the asparagus on the side, garnish with the wafer, a drizzle of oil, and sesame seeds.
