Have you ever tried making fresh tagliatelle at home? Here are some tips for a perfect result: a rough and porous sheet, perfect for capturing any sauce.
Method
- Arrange the flour in a mound (fontana) on a work surface.
- Break the eggs in the center and beat them with a fork until smooth.
- Gradually incorporate the flour and knead the dough with your hands.
- Roll out the dough with a rolling pin using circular motions from the center outward.
- Check the thickness by holding it up to the light (the sheet should be uniform).
- Let the sheet dry on a clean cloth.
- Dust with semolina or rice flour.
- Roll the sheet up on itself.
- Cut tagliatelle about 7 mm wide.
- Create nests by rolling each portion on the palm of your hand.
