Stuffed Turkey

A rich, slightly sweet-and-savory stuffing for a large turkey, with vegetables, sausage, beef, dried fruit, nuts, and aromatic spices, all precooked before filling the bird.

Ingredients

- 400 gGround Beefground beef
- 50 gFrutta secca canditaor substitute with chopped dates or figs
- Red Wineenough to soak the raisins and add to the stuffing
- 60 gSultanina Raisinssoaked in red wine before use
- 1 tbspParsleyfresh, finely chopped
- 1 tbspHoney
- 2 pcsOrangesjuice of one is used in the stuffing; the other may be used for glazing
- 250 gAppleabout 1 apple, diced with skin
- 100 gShelled Walnutsshelled walnuts
- 200 gBreaddiced and toasted in the oven
- Semi di achiote(optional) — optional, for red color; used with vegetable oil
- Seed Oil(optional) — for preparing achiote oil
Method
- Melt the butter in a wok or large pan over medium heat.
- Crush the garlic cloves, remove the skin, and add them to the melted butter.
- Add the chopped onion, carrot, and celery. Stir and sauté for a few minutes.
- Add the peas, olives, thyme, and cinnamon. Continue cooking.
- Add the sausage and ground beef. Break up the sausage with a wooden spoon so it doesn't remain in large pieces.
- Add the dried candied fruit (or chopped dates/figs) and stir.
- Pour in the red wine that was used to soak the raisins (including the raisins). Mix well.
- Let the mixture cook uncovered for about 40 minutes, until almost dry, stirring occasionally.
- Towards the end of cooking, add the freshly ground parsley, a tablespoon of honey, and the juice of one orange. Mix.
- Add the diced apple (with skin) and the walnuts. Stir.
- Add the toasted bread cubes and mix everything together.
- Optionally, for a red glaze, you can prepare achiote oil: heat achiote seeds in vegetable oil until the oil turns red, filter, and add a spoonful to the stuffing. Mix well.
- Remove from heat. The stuffing is ready to be used for the turkey.
