Method
- Insert the stuffing into the belly cavity and neck cavity of the turkey, removing the lemon and spices used during pre-cooking.
- Truss the turkey: tie a knot on one leg, then join the two small drumsticks and tie them together with kitchen string to close the belly.
- Place a slice of bread (pancarré) as a plug over the filling to keep it in place.
- Mix Lanciotti (or substitute with orange juice) and brush the turkey all over, ensuring an even coating.
- Cover the breast with slices of pancetta (bacon) to prevent the meat from drying out during cooking.
- Cover the turkey with a couple of layers of aluminum foil to retain heat and reduce cooking time.
- Bake the turkey: cook for 35 minutes per kilogram of turkey weight. For a 7 kg turkey, this is about 245 minutes (4 hours and 5 minutes).
- About one hour before the end of baking, remove the aluminum foil, brush the turkey again with the Lanciotti-orange mixture, and return it to the oven without foil to finish the glaze and crisp the skin.
- Check for doneness (internal temperature or visual cues), then carve and serve.
