Pan-Roasted Pork Shank

A delicious pan-roasted pork shank, slow-cooked with aromatic herbs and spices, finished with a hint of lemon zest.

Ingredients
14 items- 2 pcsPork ShankEach roughly 1.7–1.8 kg, for 4 people
- 2 pcsBay LeavesFresh bay leaves
- RosemaryTo taste
- SageTo taste
- ThymeTo taste, lemon thyme also works
- Juniper BerriesJuniper berries, to taste
- Garlic1–2 cloves, crushed
- MirtoMyrtle leaves, to taste
- Smoked PaprikaSmoked paprika (not spicy), to taste
- Black PeppercornsWhole black peppercorns, to taste
- SaltCoarse salt, to taste
- 1/2 lDry White WineDry white wine
- Extra Virgin Olive OilExtra virgin olive oil, for frying
- Lemon ZestGrated lemon zest, to finish
Method
- Place sage, rosemary, thyme, juniper berries, myrtle leaves, bay leaves, chopped garlic, black peppercorns, smoked paprika, and coarse salt into a blender. Blend until combined.
- Wash the pork shanks thoroughly and pat them dry.
- Heat extra virgin olive oil in a large pan over low heat. Add the shanks and brown them on all sides.
- Gradually add the spice mix to the pan, stirring constantly to prevent burning.
- Once all the spice mix has been added, increase the heat to high and pour in the white wine (500 ml for two shanks).
- Bring to a boil quickly, then add a little more smoked paprika and stir. Reduce the heat to low, cover, and simmer for about 1 hour 40 minutes to 2 hours, turning the shanks every 10–15 minutes.
- When the shanks are tender, transfer them to a serving dish. Grate some lemon zest over the top before serving.
