Spaghetti with Cod Liver Ragù

A rich and flavorful pasta dish featuring a ragù made from cod liver, cherry tomatoes, garlic, chili, and parsley. The cod liver melts into a creamy sauce that tastes of the sea.

Ingredients
10 items- 250 gSpaghettiCan also use linguine or bavette.
- 150 gFegato di MerluzzoCod liver. If you have less, you can supplement with flaked cod fillet.
- 5 pcsPomodorini PizzutelloOr use 5-6 cherry tomatoes of another variety (pachino, datterini, ciliegini). If using pizzutello, boil before peeling; for others, cut into quarters directly.
- 1 pcsGarlicOne clove, finely chopped.
- Chili PepperTo taste, finely chopped.
- ParsleyA generous bunch, finely chopped.
- SaltTo taste, for pasta water and seasoning.
- PepperFreshly ground black pepper, to taste.
- Extra Virgin Olive OilExtra virgin olive oil, for cooking.
- Lemon ZestA small piece of lemon zest (yellow part only), removed before serving.
Method
- If using pizzutello tomatoes, boil them in salted water for 2-3 minutes, then peel and finely chop. For other tomato varieties, simply cut into quarters and skip the boiling step.
- Finely chop the garlic and chili. Finely chop the cod liver. Finely chop the parsley.
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- In a large pan, heat olive oil over low heat. Add the chopped garlic and chili and sauté until fragrant.
- Add the chopped cod liver. Cook over high heat for a minute, then reduce to very low heat and continue cooking, stirring occasionally.
- Add the prepared tomatoes. Lower the heat and cook slowly for several minutes, until the sauce thickens and the flavors meld.
- Season with freshly ground black pepper and a little salt if needed. Add a small piece of lemon zest (yellow part only) to the sauce.
- When the pasta is al dente, reserve about a cup of pasta water, then drain the pasta.
- Add the drained pasta to the pan with the sauce. Increase the heat to high and toss well.
- Remove from heat, add the lemon zest and abundant chopped parsley. Toss and let rest for 30 seconds.
- Remove the lemon zest. Serve immediately.
