Spaghetti with Anchovies, Cherry Tomatoes and Bottarga

A classic Italian pasta dish featuring fresh anchovies, cherry tomatoes, and bottarga, with a secret technique to concentrate flavors.

Ingredients
13 items- 250 gSpaghettiTrafilati al bronzo (bronze-drawn)
- 250 gFresh AnchoviesWhole fresh anchovies, cleaned
- 6 pcsCherry TomatoesCherry tomatoes (Pachino or Datterini)
- 1 pcsGarlic1 clove, germ removed
- Chili PepperTo taste
- ParsleyAbundant, chopped
- 1/2 cupDry White WineDry white wine (Müller Thurgau recommended)
- 3 pcsFiletti di Acciuga Sott'OlioAnchovy fillets in oil (2-3 fillets)
- BottargaGrated, to taste
- Taggiasca OlivesPitted, a handful
- CapersIn brine, a spoonful
- SaltTo taste, for pasta water
- Extra Virgin Olive OilExtra virgin olive oil, as needed
Method
- Remove the skin and central sprout from the garlic clove and finely chop it.
- In a pan, add the chopped garlic, fresh chili pepper, a drizzle of extra virgin olive oil, the anchovy fillets in oil, olives, and capers.
- Cook the soffritto over low heat until the anchovy fillets are completely dissolved.
- Add the fresh anchovy fillets whole, spread them well on the pan, and increase the heat to high.
- Let the anchovies release their water and oil, stirring gently, then add the white wine.
- Keep the heat high to evaporate the alcohol, then reduce the liquid until the flavors are concentrated.
- Lower the heat, cover the pan, and cook for 3-4 minutes.
- Meanwhile, cut the cherry tomatoes into 3-4 pieces.
- Uncover the pan, add the cherry tomatoes, cover again, and start boiling the pasta water.
- When the water boils, add salt and cook the spaghetti al dente.
- Keep the anchovy base on very low heat; do not add any pasta water.
- When the pasta is ready, transfer it directly to the pan without pasta water. If too dry, add a drizzle of extra virgin olive oil.
- Turn off the heat, add chopped parsley and a grating of bottarga, toss well, and serve.
