Spaghetti with Anchovy Sauce

A simple and traditional pasta dish from Cetara, made with colatura di alici (anchovy sauce), olive oil, garlic, and parsley. The sauce is not cooked; the heat of the pasta releases the flavors.

  • 100 gSpaghettiper serving; use rough-textured, bronze-drawn spaghetti
  • 2 tbspExtra Virgin Olive Oilper serving; use good quality
  • 1 tbspColatura di Aliciper serving; the fermented anchovy sauce from Cetara
  • 1 pcsGarlicper serving; large clove, crushed or cut into large pieces
  • Parsleycoarsely chopped, to taste
  • Chili Pepper(optional)optional; dried chili pepper, to taste

Method

  1. Bring a pot of water to a boil. Do not add salt, as the colatura di alici is already very salty.
  2. For each serving, in a bowl combine: 2 tablespoons of extra virgin olive oil, 1 tablespoon of colatura di alici, 1 large clove of garlic (crushed or cut into large pieces), and a generous pinch of coarsely chopped parsley. Optionally, add chili pepper to taste.
  3. Cook the spaghetti (preferably a rough, bronze-drawn spaghetti) in the boiling water until al dente.
  4. Drain the pasta and immediately toss it with the raw sauce mixture in the bowl. The heat from the pasta will warm the sauce and release the aromas.
  5. Serve immediately, finishing with a drizzle of raw olive oil, a few drops of colatura, extra parsley, and chili pepper if desired.
