A simple yet flavorful pasta dish inspired by the colors of the Italian flag. Spaghetti Bandiera features spaghetti tossed with a light tomato sauce infused with garlic, chili, and fresh basil, finished with a drizzle of raw olive oil and optional pecorino cheese. Ingredients
8 items- 200 gSpaghetti
- Extra Virgin Olive Oilas needed
- 1 pcsGarlicfinely chopped
- Chili Peppera pinch, to taste
- Basildivided, some for infusing oil and some for garnish
- 200 gPeeled Tomatoespeeled tomatoes, cut in half
- Coarse Saltfor pasta water and finishing
- Pecorino Romano(optional) — shaved, optional
Method
- Bring a pot of salted water to a boil and cook the spaghetti.
- Meanwhile, in a pan, heat a drizzle of extra virgin olive oil and add a finely chopped garlic clove and a chili pepper.
- Add some torn basil leaves to infuse the oil.
- Lower the heat and add a ladle of pasta cooking water to emulsify.
- When the spaghetti are almost cooked, add the peeled tomatoes cut in half to the pan, just to warm them through.
- Drain the spaghetti al dente and transfer them to the pan.
- Toss the spaghetti with the sauce, adding more fresh basil, a drizzle of raw olive oil, and a pinch of coarse salt.
- Serve with shaved pecorino romano, if desired.
