Spaghetti with Clams

A classic spaghetti alle vongole with cherry tomatoes and a touch of creativity, cooked in one pot for maximum flavor.

Ingredients
8 items- SpaghettiSpaghettone advised for better texture
- Veraci ClamsFresh clams; about 1 kg for 2 people
- 2 pcsGarlicCloves, slightly crushed
- 1 pcsChili PepperFresh or dried chili, to taste
- Extra Virgin Olive OilGood quality extra virgin olive oil
- 10 pcsCherry TomatoesCherry tomatoes, halved or whole
- ParsleyFresh, chopped
- SaltPinch, to taste
Method
- Heat extra virgin olive oil in a large pan over high heat. Add two cloves of garlic (slightly crushed) and chili pepper.
- Let the garlic and chili infuse the oil without burning.
- Add the clams to the pan, lower the heat, and cover. Allow them to open.
- As the clams open, remove them to a plate. Discard any that remain closed.
- Raise the heat again, add the cherry tomatoes, and cook for a few minutes until they soften.
- Add the spaghetti directly into the pan, stirring to coat with the clam juices. Cook the pasta in the pan, adding a small amount of water as needed, until al dente.
- When the pasta is nearly done, return the clams (some shelled, some in shells) to the pan.
- Add chopped fresh parsley and toss to combine.
- Finish with a drizzle of raw extra virgin olive oil. Serve immediately.
