A quick and flavorful pasta dish made with leftover ventricina salami, a summer anti-waste recipe from Chef Andrea Larossa. This simple yet delicious dish transforms an end piece of ventricina into a rich, spicy sauce with tomato concentrate, garlic oil, crusco pepper, and rosemary.

Ingredients

- Garlic OilGarlic-infused oil; can substitute with Power oil
- Power OilPower oil (garlic and chili flavored oil); can substitute with garlic oil
- Tomato PasteTomato paste; can use passata instead
- Coarse SaltCoarse salt for pasta water
- SpaghettiPreferably spaghetti alla chitarra
- ParsleyFresh parsley, roughly chopped
- Polvere di Peperone CruscoCrusco pepper powder (dried and ground sweet pepper)
- Rosemary PowderRosemary powder
Method
- Remove the skin from the ventricina: if it is hard, wrap it in a damp cloth for 10-15 minutes to make it easier.
- Cut the ventricina into thick slices, then into strips, and finally into cubes.
- In a cold pan, add a drizzle of garlic oil (or Power oil).
- Add the cubed ventricina, turn on low heat, and warm gently without frying.
- Add a tablespoon of tomato concentrate (or passata) and a little hot water; stir to create a sauce.
- Meanwhile, bring a pot of salted water to a boil (coarse salt, about 10g per liter).
- Add the spaghetti and cook for half the package time (e.g., 6 minutes if the pasta requires 12 minutes).
- Drain the spaghetti al dente and transfer to the pan with the sauce; add a ladle of pasta water.
- Continue cooking in the sauce for another 6 minutes, stirring gently, adding more pasta water if needed.
- Finely chop the parsley (rough chop).
- When the pasta is done, plate it and spoon some sauce over.
- Sprinkle with crusco pepper powder, rosemary powder, and chopped parsley.
