A simple yet flavorful pasta dish inspired by Diego Maradona, featuring spaghetti with garlic, chili, and crunchy fried breadcrumbs, finished with Grana Padano and parsley.

Ingredients
8 items- 200 gSpaghettiUse spaghettoni for a chunkier texture
- 3 pcsGarlicSliced thinly, not minced
- Olive OilExtra virgin, abundant for frying
- 1 pcsChili PepperFresh red chili, seeds removed, finely chopped
- Coarse BreadcrumbsCoarse breadcrumbs, preferably homemade
- ParsleyFresh, chopped
- Grated Grana PadanoGrated, for sprinkling
- Fine SaltFor salting pasta water and emulsion
Method
- In a non-stick pan, add abundant olive oil.
- Peel the garlic cloves and slice them thinly.
- Add the garlic to the pan with the oil, lower the heat and add a splash of salted water to create an emulsion.
- Cut the chili pepper in half, remove the seeds and finely chop it. Add to the pan.
- Cook the spaghetti in plenty of salted water for 15 minutes or until half-cooked.
- In a second pan, add abundant olive oil and heat. Add the coarse breadcrumbs and fry until golden and crunchy.
- At half cooking, drain the spaghetti and transfer them to the pan with garlic and chili. Add a ladle of pasta water and a drizzle of oil. Finish cooking until al dente.
- Plate the spaghetti. Sprinkle with the crunchy breadcrumbs, grated Grana Padano, and chopped parsley.
