A quick and flavorful spaghetti dish from Naples, dedicated to San Gennaro, with crispy garlic bread, cherry tomatoes, anchovy, and oregano.

Ingredients
10 items- Breadrustic bread, sliced
- Garlicone clove
- Olive Oilextra virgin olive oil, as needed
- Chili Pepperto taste
- 2 pcsAnchovy Fillets
- Oreganoto taste
- Cherry Tomatoescherry tomatoes, halved
- Spaghettiquantity for 2 servings
- Saltfor pasta water
- Fresh Basila few leaves for garnish
Method
- Cut the bread into slices, remove excess crumb, and rub with a garlic clove.
- In a pan with a drizzle of oil, toast the bread until golden. Set aside.
- In the same pan, add another drizzle of oil, a pinch of chili, two anchovy fillets, a pinch of oregano, and cherry tomatoes cut in half. Cook for a few minutes without overcooking the tomatoes.
- Cook the spaghetti in salted boiling water until al dente. Reserve some pasta water.
- Transfer the spaghetti to the pan with the sauce. Toss with a ladle of pasta water for about 3 minutes until the sauce coats the pasta.
- Serve the spaghetti topped with the crispy bread, fresh basil leaves, and a drizzle of raw oil.
