A quick and flavorful spaghetti dish from Naples, dedicated to San Gennaro, with crispy garlic bread, cherry tomatoes, anchovy, and oregano.

Method

  1. Cut the bread into slices, remove excess crumb, and rub with a garlic clove.
  2. In a pan with a drizzle of oil, toast the bread until golden. Set aside.
  3. In the same pan, add another drizzle of oil, a pinch of chili, two anchovy fillets, a pinch of oregano, and cherry tomatoes cut in half. Cook for a few minutes without overcooking the tomatoes.
  4. Cook the spaghetti in salted boiling water until al dente. Reserve some pasta water.
  5. Transfer the spaghetti to the pan with the sauce. Toss with a ladle of pasta water for about 3 minutes until the sauce coats the pasta.
  6. Serve the spaghetti topped with the crispy bread, fresh basil leaves, and a drizzle of raw oil.
