Spaghetti with Lobster and Black Truffle

Lobster is the king of the table, but you don't need a special occasion to enjoy a gourmet dish. In this recipe, Chef Stefano Barbato reveals how to prepare spaghetti with lobster and black truffle with an incredible creaminess. The secret? We don't waste anything: we blend the cooking base to obtain an emulsion that wraps the spaghetti divinely. An elegant dish, perfect for a romantic dinner, a Sunday with family, or whenever you want to treat yourself to a moment of high cuisine.

Ingredients
12 items- 670 gLobsterone lobster, about 670g for two people
- 1 pcsGarlic1 clove, crushed with skin on
- Cherry Tomatoesa handful of cherry tomatoes, halved or quartered
- 20 gButterabout 20g, for the cream
- 220 gSpaghettibronze-drawn spaghetti, 200-230g for two people
- Extra Virgin Olive Oilto cover the bottom of the pan
- Brandy o Cognaca splash (about half a small glass) for flambéing
- Black Pepperto taste
- Saltto taste, for pasta water and seasoning
- Parsleya handful of fresh parsley, chopped
- Black Truffle(optional) — optional, a small black truffle (about €10 worth per two people)
- Chili Pepper(optional) — optional, a small chili pepper
Method
- Freeze the live lobster in the freezer for 15 minutes to make handling easier.
- Separate the head from the body.
- Remove the stomach sack (near the mouth) from the head and discard it.
- Crack the claws with a nutcracker to allow flavors to release, keeping all juices.
- Remove the tail meat by pressing on the sides and pulling it out.
- Crush a garlic clove with the skin on.
- Cut the cherry tomatoes in half or quarters.
- Heat a generous amount of extra virgin olive oil in a pan and add the crushed garlic (and optional chili).
- Sauté until fragrant, then add the lobster head and all shells. Cook until the lobster turns golden.
- Add the tail meat and any reserved juices from the plate.
- Pour in a splash of brandy or cognac and flambé over high heat to develop deeper flavors.
- Add the cut tomatoes, salt, and pepper. Cover and cook for 5 minutes over medium heat.
- Remove the tail and head halves from the pan; set aside.
- Discard the garlic clove and all large shells from the pan.
- Transfer all remaining cooking juices and solids to a blender. Add the butter and blend until smooth and creamy. Set the cream aside.
- In the meantime, clean the black truffle (if using) by scrubbing under water and removing any soil.
- Bring a large pot of water to a boil, add the lobster shells (optional) and salt, then cook the spaghetti until al dente.
- Cut the reserved lobster tail into small bite-sized pieces and stir them into the cream.
- When the pasta is almost ready, reheat the lobster head halves in a separate pan with a ladle of pasta water.
- Drain the spaghetti (reserve some pasta water) and add it to the pan with the heads. Toss over high heat for a minute.
- Add the lobster cream, remove from heat immediately, and stir vigorously to coat the pasta.
- Fold in fresh chopped parsley.
- Plate by placing a head half with claw on each plate, create a nest of spaghetti on top, and finish with a few slices of black truffle and a drizzle of the remaining cream from the blender.
