Spaghetti with Tuna Pâté

A simple and delicious first course: spaghetti tossed with a creamy tuna pâté made with butter, Parmesan, and fresh parsley. The pâté is prepared by mashing the tuna with a fork, adding pasta water, butter, Parmesan, parsley, pepper, and extra virgin olive oil, then combined with al dente spaghetti for a quick, satisfying meal.

Ingredients
8 items- 200 gSpaghettiDry spaghetti, cooked al dente
- Tuna in OilCanned tuna in oil, drained; or homemade tuna preserved in oil. About 150-200 g net weight.
- 25 gButterUnsalted butter
- 25 gParmigiano ReggianoGrated
- ParsleyFinely chopped, used both in the pâté and for garnish
- Extra Virgin Olive OilFresh extra virgin olive oil, for the pâté and finishing drizzle
- Black PepperFreshly ground black pepper, added to taste
- Coarse Salt(optional) — Coarse salt for the pasta water; optional for final adjustment of the pâté
Method
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- While the pasta cooks, prepare the tuna pâté: in a bowl, place the tuna (drained of its preserving oil) and mash it with a fork.
- Add a small ladle of pasta cooking water to the tuna and mix well.
- Add the butter and continue mixing until it melts and incorporates.
- Add the grated Parmesan cheese and mix thoroughly until creamy.
- Add the finely chopped parsley, a pinch of black pepper, and a drizzle of fresh extra virgin olive oil. Mix well.
- Taste the pâté and adjust with a pinch of salt if needed (remember the tuna and Parmesan are already salty).
- When the spaghetti are al dente, drain them, reserving some pasta water.
- In a serving bowl, place about three-quarters of the tuna pâté, then add the hot spaghetti on top.
- Add a little pasta water and mix vigorously to create a creamy sauce that coats the pasta.
- Add the remaining pâté and continue mixing until fully combined.
- Plate the spaghetti, garnish with a sprinkle of fresh parsley, a few cracks of black pepper, and a drizzle of extra virgin olive oil in the center. Serve immediately.
