Spaghetti Aglio, Olio e Peperone

A creative twist on the classic spaghetti aglio e olio, where sweet bell peppers replace the traditional chili pepper. The peppers are finely diced and fried in olive oil with garlic until slightly caramelized, giving the dish an intense, aromatic flavor. Optional chili pepper adds a spicy kick.

Ingredients
7 items- 250 gSpaghettifor 2 people, about 125g per person
- Peperoni Dolci Mistia mix of red, yellow, and green bell peppers, diced very small
- Garlic2-3 cloves, finely chopped
- Extra Virgin Olive Oilgenerous amount to cover the bottom of the pan
- Parsleyfresh, chopped, a generous sprinkle
- Hot Chili Pepper(optional) — optional, 2-3 small hot chili peppers, to taste
- Saltto taste, for the pepper cooking and pasta water
Method
- Prepare the peppers: remove seeds and white filaments, then dice them very small.
- Bring a pot of salted water to a boil for the spaghetti.
- In a sauté pan, add a generous amount of extra virgin olive oil and heat over high heat.
- Add the finely chopped garlic and let it sizzle until fragrant.
- Immediately add the diced peppers. Cook on high heat, stirring occasionally, until the peppers start to caramelize and release their aroma. Add a pinch of salt.
- Once the water is boiling, add the spaghetti and cook until al dente.
- Drain the spaghetti (reserve some cooking water if needed) and transfer directly to the pan with the peppers. Toss well over heat, adding a splash of cooking water only if you want a creamier texture.
- Remove from heat and add freshly chopped parsley. Mix well.
- Plate the spaghetti, drizzle with a little of the cooking oil from the pan, and serve immediately.
