  • EggUse about 3-4 large eggs, depending on size.
  • SugarWhite granulated sugar.
  • SaltA pinch of salt.
  • Lemon ZestGrated zest of one lemon.
  • MilkWhole milk preferred.
  • Melted ButterMelted butter; can be substituted with vegetable oil.
  • CinnamonGround cinnamon, about 1 teaspoon.
  • YogurtPlain yogurt, about 100-150g.
  • FlourAll-purpose flour or substitute with whole wheat, spelt, or buckwheat flour.
  • YeastBaking powder, about 1 packet (16g).
  • ApplesRenetta or Golden Delicious apples, about 4-5.
  • Cane SugarBrown sugar for topping; can use white sugar instead.

Method

  1. Place whole eggs, sugar, salt, and lemon zest in a mixer or bowl. Beat for about 1 minute.
  2. Add milk, melted butter (or substitute with vegetable oil), and cinnamon. Beat for 30 seconds.
  3. Add yogurt, flour, and baking powder. Beat for another 30 seconds until smooth.
  4. Peel the apples, remove cores, and slice into thin wedges.
  5. Butter and line a 24–26 cm cake tin with parchment paper.
  6. Pour the batter into the tin. Arrange the apple slices on top in a decorative pattern, pushing them slightly into the batter.
  7. Sprinkle the surface generously with brown sugar (or white sugar) to create a caramelized crust.
  8. Bake in a preheated static oven at 180°C (350°F) on the middle rack for about 45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake rest in the tin covered with aluminum foil until warm, then unmold onto a serving plate or cutting board. Cool completely before serving.
