A vegetarian twist on the classic Russian layered salad, perfect for Christmas. Layers of steamed vegetables, hard-boiled eggs, and mayonnaise, topped with crunchy garnish.

Method
- Grate the steamed potatoes, carrots, and beets separately.
- Grate the hard-boiled eggs.
- Sauté the onion in a pan with oil and a splash of water until soft.
- Start layering: place a layer of grated potatoes at the base of a serving dish.
- Add a generous layer of mayonnaise over the potatoes.
- Continue layering the remaining ingredients (carrots, beets, eggs, onion) in any order, adding mayonnaise between each layer.
- Season each vegetable layer with a pinch of salt and pepper.
- Finish with a top layer of beets and cover completely with mayonnaise.
- Refrigerate for at least a few hours, preferably overnight, to allow flavors to meld.
- Just before serving, garnish with vegetable chips, caper flowers, and fresh fennel fronds.
