Sausage, Onion and Peppers

A classic Italian recipe showcasing succulent sausages, sweet onions, and vibrant peppers, slow-cooked with cherry tomatoes and white wine. Perfect as a hearty second course or tossed with pasta for a delicious first course.

Ingredients

- Bell PeppersMix of colors; about half the weight of the sausage
- Red OnionAbundant
- 1 pcsGarlic1 clove
- Chili Pepper(optional) — To taste
- Cherry TomatoesCherry tomatoes, about 100-150 g total
- Dry White WineA splash for deglazing
- Extra Virgin Olive OilAs needed
- SaltTo taste, adjust at end
- Pecorino(optional) — For the pasta version; grated
- Parmigiano Reggiano(optional) — Optional alternative to pecorino
Method
- Slice the red onion into strips, not too thin.
- Peel and finely chop the garlic clove.
- Prepare the sausage: for the second course, leave whole and cut into pieces; for the first course, remove the casing and cut into small nuggets (like polpettine).
- Clean the peppers and slice them into thin strips.
- Halve the cherry tomatoes.
- Optional: chop fresh chili pepper.
- Heat olive oil in a wide pan over high heat. Add the garlic and chili pepper.
- When the garlic starts to sizzle, add the sausage pieces. Brown well on all sides.
- Deglaze with dry white wine and cook until the alcohol has evaporated.
- Add all the onion and sauté over high heat until softened.
- Add the peppers and a pinch of salt. Stir well.
- Add the halved cherry tomatoes. Stir to combine.
- Cover, reduce heat to low, and simmer for 20 minutes.
- After 20 minutes, uncover. For the second course, serve the sausage, peppers and onion directly with bread.
- For the first course: if using pasta, cook the pasta al dente in salted boiling water. Meanwhile, continue reducing the sauce uncovered over low heat until thickened.
- Drain the pasta and transfer to the pan with the sauce. Add grated pecorino cheese (or parmesan) and toss well.
- Serve immediately, optionally with extra cheese and bread.
