Ingredients

- 60 gTaleggio
- 40 gButter
- 250 mlRed WineFor the reduction; the chef also uses a splash of white wine for the risotto (not quantified)

Method
- In a small saucepan, combine red wine, sugar, and figs. Simmer gently to reduce into a syrup.
- Toast the rice in a separate pot until translucent.
- Add white wine to the toasted rice and let it evaporate. Then cook the rice with a pinch of salt and boiling water, adding water as needed.
- Grill a few figs for garnish.
- Cut the Taleggio into small cubes and set aside with the butter.
- When the risotto is al dente, remove from heat. Add the butter and Taleggio cubes, stir to mantecare. Cover and let rest for 1 minute.
- Serve the risotto topped with the grilled figs and a drizzle of the red wine reduction.
