Risotto with Porcini and Ovuli Mushrooms

A spectacular risotto with porcini mushrooms, ovuli, and other wild mushrooms, using a secret technique to ensure perfect creaminess. Finished with fresh raw ovuli and Parmesan shavings.

14 items- 350 gCarnaroli Rice
- 400 gFunghi Misti (Porcini, Finferli, Ovuli)Mixed mushrooms: porcini, chanterelles (finferli), and ovuli (Caesar's mushrooms). Use any edible wild mushrooms.
- 2 pcsShallotTwo shallots, one for the initial sauté and one for the risotto base.
- 30 gDried Porcini MushroomsRehydrated in the broth.
- 1 lVegetable BrothHomemade vegetable broth with rehydrated dried porcini. Keep hot but not boiling.
- 2 pcsButterTwo knobs of butter: one for sautéing shallots, one for mantecatura.
- 1 cupVino Bianco FrizzanteOne glass of sparkling white wine. Can substitute with still white wine.
- 50 gParmigiano ReggianoGrated for mantecatura; extra shavings for garnish.
- Extra Virgin Olive OilFor sautéing and for seasoning the raw ovuli.
- Chopped ParsleyFresh parsley, chopped.
- ThymeFresh or dried thyme.
- SaltTo taste. Salt is added via the broth and mushroom seasoning.
- Black PepperTo taste.
- Ovuli (Crudi per Guarnizione)(optional) — Fresh ovuli (Caesar's mushrooms), sliced raw, seasoned with salt, pepper, and olive oil. Used as garnish.
Method
- Clean the mushrooms: separate caps from stems. Check caps for holes (indicating worms). If stem is soft, discard. Cut stems into cubes, caps into slices.
- For finferli (chanterelles), cut off the bottom and chop finely but not too fine.
- Reserve the ovuli for later use as raw garnish.
- Finely chop one shallot.
- In a pan with olive oil, sauté the shallot until golden.
- Add the mushrooms (porcini, finferli, etc.) and sauté (trifolare) with chopped parsley, salt, pepper, and fresh or dried thyme for 4-5 minutes until creamy. Set aside.
- Prepare vegetable broth with rehydrated dried porcini mushrooms: extract the rehydrated porcini from the broth and reserve the broth. Keep the broth hot but not boiling.
- In the same pan (unwashed to retain flavors), add a knob of butter and another finely chopped shallot. Sauté until translucent.
- Add the carnaroli rice and toast for 1-1.5 minutes until it absorbs the butter and aromas.
- Add the previously sautéed mushrooms and mix well.
- Add a glass of sparkling white wine and let the alcohol evaporate.
- Begin adding the hot broth one ladle at a time, stirring frequently. Add more broth as each ladle is absorbed. Cook until the rice is 2 minutes before the packaging cooking time.
- Turn off the heat. Add a knob of butter and stir vigorously (mantecatura): start from the center and bring the rice from the edges to the center, mixing until creamy.
- Add grated Parmesan and continue stirring until fully incorporated.
- Cover the pan and let the risotto rest for 1.5-2 minutes.
- Serve the risotto. Optionally, slice the raw ovuli, season with salt, pepper, and olive oil, and place on top of the risotto with Parmesan shavings.
