A hearty winter soup with rice, potatoes, savoy cabbage, and pancetta, enriched with a vegetable broth flavored with Grana Padano rind. Finished with grated cheese and leftover broth vegetables for extra texture and flavor.

Method

  1. Prepare the broth: In a pot with plenty of water, add a zucchini, a carrot, celery stalks, an onion, and some Grana Padano rinds. Let it cook.
  2. While the broth is cooking, prepare the vegetables: In a large pan, heat abundant olive oil and sauté the other half of the onion. Add the pancetta (optional), then diced potatoes and shredded savoy cabbage. Stir.
  3. After the broth has cooked, add a ladle of broth to the pan with the vegetables, cover, and cook for about 10-15 minutes to soften the potatoes and cabbage.
  4. Add the rice to the pan. Continue to cook, adding more vegetable broth as needed until the rice is cooked al dente.
  5. Retrieve the vegetables used to make the broth (zucchini, carrot, celery, onion). Either blend them into a purée or dice them into small cubes. Add them to the soup.
  6. Add a generous handful of grated Grana Padano cheese, mix well, and adjust seasoning with salt and pepper.
  7. Serve hot, optionally with extra grated cheese.
