Sautéed porcini mushrooms slowly cooked with fresh tomato sauce, white wine, and garlic. A classic Italian autumn side dish.

Ingredients
9 items- 250 gFresh Porcini Mushrooms
- 10 pcsCherry TomatoesCherry tomatoes
- 1 pcsGarlic1 clove
- 1/2 cupWhite WineDry white wine
- SaltTo taste
- Black PepperTo taste
- ParsleyFresh, for garnish
- Olive OilExtra virgin, for cooking
- WaterTo thin the sauce
Method
- Slice the porcini mushrooms, both caps and stems, into uniform pieces.
- Blend the cherry tomatoes in a blender to obtain a smooth sauce; set aside.
- In a pan, heat olive oil and brown a whole garlic clove. Add the sliced mushrooms and sauté until golden.
- Deglaze with white wine and let the alcohol evaporate completely.
- Add a small piece of the garlic from the pan into the tomato sauce, season with salt and pepper, then add the sauce to the mushrooms along with a splash of water. Cook until the sauce thickens and becomes glossy.
- Finish with a sprinkle of fresh parsley and serve.
