Soft and flavorful smoked salmon and ricotta polpettine, served with a light and egg-free avocado mayonnaise. Perfect for an aperitivo with friends.

- Lemon ZestGrated zest of one lemon
- 1/2 pcsEggHalf an egg (white only)
- BreadcrumbsAs needed to adjust consistency

- Olio di Semi di Sesamo TostatoTo taste, for the mayonnaise

- Bevanda Vegetale di Riso (o Latte)A splash, for the mayonnaise
Method
- Roughly chop the smoked salmon with a knife.
- In a bowl, mix the mashed potato with the chopped salmon.
- Add ricotta, a pinch of salt, pepper, chopped parsley, and lemon zest.
- Add half an egg white and adjust the consistency with breadcrumbs.
- Shape the mixture into equal-sized one-bite polpettine using a spoon.
- In a pan, melt some butter and cook the polpettine for about 5 minutes, turning to brown them evenly.
- Prepare the avocado mayonnaise: cut the avocado in half, remove the pit, and scoop out the flesh.
- Roughly dice the avocado and place it in a blender cup.
- Add toasted sesame oil, juice of half a lime, a pinch of salt, and a splash of rice milk (or regular milk).
- Blend until smooth, adjusting salt if needed.
- Plate: arrange the polpettine on a dish and garnish with the avocado mayonnaise.
