- Take stale bread and process it to obtain breadcrumbs.
- In a large bowl, combine the breadcrumbs, ricotta, pecorino, and eggs.
- Mix well.
- Add lemon zest and finely chopped mint leaves.
- Form small finger-food sized balls.
- Prepare a breading mixture of breadcrumbs and cornmeal.
- Coat each ball in the breading.
- Fry in hot oil until golden brown.
