Classic recipe for Italian fried meatballs, soft and flavorful, made with ground beef, pancetta, Parmesan, and bread soaked in milk, then fried to golden perfection.

Ingredients

- 100 gPancetta Cotta AffumicataCan be substituted with cooked ham, Prague ham, smoked pancetta, boiled meat leftovers, roast, or mortadella.
- 100 gParmigiano ReggianoAlternatively, mix 50 g pecorino and 50 g grana padano.
- 1 pcsMedium Whole EggCrack into a separate bowl first to check freshness.
- 40 mlFresh Whole MilkUse 30-50 ml depending on bread absorption.
- 2 pcsSandwich BreadWhite bread slices (or bread for sandwiches).
- 1 tspSaltOne teaspoon, adjust to taste.
- PepperFreshly ground black pepper, to taste.
- 1 pcsGarlicOne clove, finely minced with salt and parsley.
- ParsleyA small bunch, finely chopped.
- Extra Virgin Olive OilA drizzle, for flavor.
- 100 gBreadcrumbsFor breading; some may be added to the mixture if needed.
- Sunflower OilFor deep frying; enough to submerge meatballs.
Method
- Crush the garlic clove, remove the skin and the central sprout. Finely chop it with a pinch of salt and parsley until it forms a paste.
- Place the ground beef in a bowl and add the garlic and parsley paste.
- Finely chop the cooked smoked pancetta (or substitute) and add it to the meat.
- Add freshly ground black pepper and grated Parmigiano Reggiano. Mix briefly.
- In a separate bowl, soak the sliced white bread in fresh milk until soft but not liquid. Squeeze if necessary.
- Add the soaked bread to the meat mixture.
- Add 1 teaspoon of salt, a drizzle of extra virgin olive oil, and 1 whole egg (cracked into a separate bowl first).
- Knead by hand for 4–5 minutes until the mixture is homogeneous, compact, elastic, and soft. If still sticky, add a little breadcrumbs.
- Shape the meatballs: take a portion of the dough, roll it between your palms to form a smooth ball, creating a thin outer film.
- Coat the meatballs in breadcrumbs, shaking off excess.
- Heat sunflower oil in a deep pan to 170°C (test with a wooden toothpick: bubbles form). Fry the meatballs for 4–5 minutes until golden brown.
- Drain on paper towels and serve hot. Optional: dip in mayonnaise, fondue, or serve with cherry tomatoes and basil.
