Classic Italian meatballs simmered in a rich tomato sauce, versatile for baking, frying, or serving with spaghetti.

Ingredients
15 items- 500 gCarne TrittaUse mixed ground meat with 30% pork for more flavor, or all beef.
- 50 gParmigiano Reggiano
- 50 gBreadcrumbs
- ParsleyA small bunch, finely chopped.
- 1 pcsGarlic Clove(optional) — Remove the green germ for milder flavor; can be omitted.
- 1 pcsEgg
- SaltTo taste.
- PepperTo taste.
- Extra Virgin Olive OilA drizzle for the mixture and for sautéing.
- ShallotOne shallot, minced.
- 560 mlTomato SauceUse a good quality passata or tomato puree.
- WaterAbout 3/4 of the tomato sauce jar to rinse and add to the pan.
- 1 tspSugarTo reduce acidity of the tomato sauce.
- BasilFresh leaves, added at the end.
- Pecorino(optional) — Grated, for serving (optional).
Method
- Add ground meat, parmesan, breadcrumbs, egg, salt, pepper, olive oil, and finely chopped parsley and garlic (garlic optional, remove germ for milder flavor) to a bowl.
- Mix well with your hands until all ingredients are evenly combined.
- Shape the mixture into meatballs: for tomato sauce, make medium-sized round balls (about the size of a walnut).
- Optionally, adjust size and shape for other cooking methods: flatten slightly for baking, roll in breadcrumbs for frying, or make smaller for broth.
- In a large pan or wok, heat a drizzle of olive oil and sauté minced shallot with half a glass of water (never add water to hot oil).
- When the shallot starts sizzling, add the meatballs to the pan.
- Gently shake the pan to turn the meatballs without breaking them. Cover and cook for 5–6 minutes.
- Uncover, shake again to turn, then add the tomato sauce.
- Rinse the tomato sauce jar with about three-quarters of water and add to the pan.
- Season with salt and add a teaspoon of sugar to reduce the acidity of the tomato.
- Cover and cook over moderate heat for 45 minutes.
- Remove from heat, add fresh basil leaves, and let rest for a few minutes.
- Serve meatballs on their own or with spaghetti, optionally topped with grated pecorino.
