A classic Italian-Chinese dish: chicken thighs with almonds in a glossy soy sauce, ready in 10 minutes.

Ingredients
11 items- Chicken ThighsDeboned and cut into pieces
- Spring OnionSliced into rounds
- GingerMinced
- Sesame Oil
- Extra Virgin Olive Oil
- 3 pcsChili Pepper(optional) — Whole, for infusion. Remove before serving if desired.
- Mandorle con BucciaReserve some for garnish
- Soy SauceTo deglaze and season. No salt needed.
- ChivesChopped
- 4 tspCornstarchDissolved in hot water to thicken the sauce
- Hot WaterFor dissolving cornstarch and thinning sauce
Method
- Slice the spring onion into rounds and mince the ginger.
- In a hot pan with a splash of sesame oil and extra virgin olive oil, sauté the spring onion, ginger, and 3 whole chili peppers (for infusion).
- Add the deboned chicken thighs cut into pieces and stir-fry over high heat until well cooked.
- Add the almonds with skin and toss together until they start to caramelize.
- Deglaze the pan with soy sauce and lower the heat.
- Add some chopped chives and mix.
- In a small bowl, dissolve 4 teaspoons of cornstarch in hot water to make a slurry.
- Pour the cornstarch slurry into the pan and stir to thicken the sauce and give it a glossy shine.
- Add a little more water if needed to thin the sauce.
- Remove the chili peppers (optional) and serve the chicken garnished with reserved chopped almonds and fresh chives.
