Chicken Cacciatore with Olives

A traditional Italian chicken cacciatore braised with tomatoes, aromatic vegetables, and black olives, slow-cooked for deep flavour.

- 1 pcsOnion
- 1 pcsCelery1 stalk
- 1 pcsGarlic1 clove
- 1 pcsRosemary1 sprig
- 1 pcsSage1 sprig
- Chopped Parsleya handful
- 400 mlTomato Sauce
- Red Wine1 glass (about 150-200 ml)
- Olive Nere Taggiascheto taste
- Chili Pepperto taste
- Saltto taste
- Pepperto taste
- Extra Virgin Olive Oilto taste
- Waterabout 1/3 the volume of the tomato sauce jar, to rinse the jar and dilute
Method
- Dice the carrot, celery, and onion into small cubes. Peel the garlic clove.
- In a pan, add a drizzle of extra virgin olive oil, chili pepper, the whole garlic clove, and sprigs of rosemary and sage. Heat over medium heat.
- Add the chicken pieces, skin side down, and cook for 3–4 minutes until the skin is golden and crispy.
- Turn the chicken pieces, season with salt and pepper on both sides.
- Deglaze with a glass of red wine over high heat, letting the alcohol evaporate.
- Remove the garlic and herb sprigs.
- Add the diced vegetables (carrot, celery, onion) and stir well to distribute evenly.
- Reduce the heat, cover the pan, and cook for 5 minutes.
- Add 400 ml of tomato sauce and about a third of its volume in water (to rinse the jar). Stir, cover, and simmer on low heat for 45 minutes.
- During the last 10 minutes of cooking, add the Taggiasche black olives.
- Turn off the heat, add the chopped parsley, and stir.
- Serve the chicken with its sauce.
