Ingredients

- Rosemaryfresh sprigs
- Thymefresh sprigs
- Bay Leavesfresh or dried leaves
- 2 pcsGarliccloves, in skin
- Sagefresh leaves
- 1 pcsRed Onionlarge
- 1/2 pcsFennellarge bulb
- 1 pcsBell Pepperpreferably red or yellow
- New Potatoesif not available, use regular potatoes, peeled and cut into chunks
- Pepperfreshly ground
- Extra Virgin Olive Oilextra virgin
- Saltto taste
- 2 tspCurcuma o Curry(optional) — for the optional glaze
Method
- Clean the chicken: remove the gland above the tail. Season inside and out with pepper.
- Cut the vegetables: pepper into large chunks, onion into quarters, fennel into large chunks, potatoes (new potatoes, skin on, cut into chunks; if regular, peel and cut).
- Stuff the chicken cavity with a clove of garlic (in its skin), herbs (sage, rosemary, bay leaf), and some pieces of fennel and potato.
- Prepare a baking tray: scatter herbs (bay, rosemary, sage), a clove of garlic (split), pepper, and a drizzle of olive oil.
- Place the chicken in the tray and surround with the cut vegetables. Season vegetables with salt, pepper, and olive oil.
- Optional: Make a glaze by mixing 2 teaspoons of turmeric or curry powder with a little olive oil. Brush over the chicken for extra flavor.
- Roast at 200°C (392°F) for 1 hour 20 minutes, until the chicken is golden and cooked through.
- Serve the chicken with the roasted vegetables.
