Pumpkin and Chocolate Plumcake

A festive plumcake made with pumpkin and chocolate, perfect for Christmas celebrations. This recipe uses plant-based milk and is vegan-friendly.

Ingredients
12 items- 300 gMantovana or Delica Pumpkin
- 10 gFresh Ginger
- 5 gCardamom
- 5 gCinnamon
- Nutmeg
- Salt
- 30 mlCorn Oil
- 30 mlPlant MilkPreferably oat milk
- 520 gFlour
- 250 mlRaw Cane Sugar
- YeastBaking powder
- 40 gDark ChocolateReserve some for decoration
Method
- Clean and peel the pumpkin, then cut into small cubes.
- Finely chop the ginger and add to the pumpkin.
- Add cardamom, cinnamon, nutmeg, salt, a drizzle of seed oil, and a drizzle of oat milk. Cook for a few minutes, then blend until smooth.
- In a bowl, mix flour and sugar, then add the pumpkin mixture.
- Finally, add the baking powder and finely chopped dark chocolate, reserving some for decoration. Mix well to avoid lumps.
- Pour into a silicone plumcake mold.
- Bake at 180°C (350°F) for 40-45 minutes.
- Let cool and serve.
