Quick and easy puff pastry mini pizzas topped with tomato sauce, anchovies, mozzarella, and a fresh basil pesto-like sauce. Perfect for aperitivo or parties.

Ingredients

- 200 mlTomato Passata
- 5.5 pcsAnchovies in Oil5-6 fillets
- MozzarellaOne cube per pizzetta
- 20 gFresh Basil
- 1 tbspPine Nuts
- 1 pcsGarlic1 clove
- 10 gGrated Cheesee.g., Parmesan
- Fiore SardoA piece of pecorino cheese
- Dried Oregano(optional) — To taste
- Olive OilExtra virgin for the sauce and a drizzle for the passata
- Salt(optional) — A pinch
Method
- Using a cookie cutter, cut disks from the puff pastry. Overlap two disks for each mini pizza to increase thickness.
- On each base, place a piece of anchovy and a cube of mozzarella.
- Prepare the frames: using the same cutter, cut more disks and with a smaller cutter remove the centers to obtain rings. Place the rings over the filled bases.
- Season the tomato passata with a drizzle of oil and a pinch of salt; spoon some onto each pizzetta and sprinkle with dried oregano.
- Bake in a static oven at 180-190°C for 12-15 minutes.
- Meanwhile, prepare the basil sauce: blend fresh basil, extra virgin olive oil, pine nuts, garlic, grated cheese and a piece of Fiore Sardo (pecorino) with an immersion blender.
- Remove the pizzette from the oven and finish with the basil sauce.
