Method
- Prepare the dough: mix 400 g of type 0 flour, 100 g of semolina flour, 360 ml of cold water, 3 g of dry yeast, and 10 g of salt. Knead until smooth, then let rise for 5-6 hours.
- Divide the dough into 80 g balls and let them rest covered.
- Stretch each ball directly onto an oiled baking sheet to form small pizzettes.
- Bake in the lower part of the oven without toppings for a few minutes.
- Top with small cubes of fontina, fior di latte, and gorgonzola.
- Bake for a few more minutes in the center of the oven.
- Finish with fresh figs, walnuts, and a sprinkle of marjoram.
