A classic Neapolitan fried pizza filled with creamy buffalo ricotta, smoked scamorza cheese, crispy pork cracklings (ciccioli), and crushed tomatoes, seasoned with oregano and olive oil, then deep-fried until golden and crispy.

- Peeled TomatoesCrushed by hand.
- Extra Virgin Olive Oil
- Salt
- Oregano
- Ricotta di BufalaCreamy buffalo ricotta.
- Smoked ScamorzaCut into strips.
- Ciccioli di Maiale(optional) — Crispy pork cracklings, can be substituted with salami or sausage.
Method
- Prepare the fillings: cut the smoked scamorza into strips; have the ciccioli ready; crumble the buffalo ricotta if needed.
- Take the pizza dough (recipe from the Margherita pizza video) and place it on a floured surface. Flatten it into a disc, pressing from the center outward.
- Spread crushed peeled tomatoes over the dough, drizzle with extra virgin olive oil, season with salt and oregano.
- Distribute the buffalo ricotta and strips of scamorza over the tomatoes. Add ciccioli if desired.
- Fold the dough over the filling and seal the edges tightly.
- Heat oil to 170°C (338°F). Fry the pizza for about 5-7 minutes, basting continuously with hot oil, until golden and crispy.
- Drain on paper towels and serve hot.
