Glazed duck breast with orange and soy caramel, served with boiled potatoes. A crispy and flavorful recipe.

- Clean the duck breast by removing excess fat from the skin.
- Make three slashes on the skin.
- Put the trimmed duck fat pieces in a cold pan and turn on medium heat.
- Meanwhile, boil two potatoes in salted water.
- Press the duck fat as it renders.
- When the fat is hot, place the duck breast in the pan skin side down.
- Cook on medium-high heat until the skin is very crispy, then turn and cook the other sides.
- Remove the pan from the heat, add brown sugar and soy sauce, and stir to create a caramel.
- Remove the fried duck fat pieces, then return the duck breast to the pan.
- Return the pan to the heat and glaze the duck with the sauce using a spoon.
- Add a drizzle of olive oil, a pinch of salt, and a sprig of thyme, continuing to glaze.
- When the sauce is thick and the glaze is even, remove from heat.
- Serve the duck breast sliced with the boiled potatoes, sprinkle with sesame seeds and some sauce.
