Pan-Seared Swordfish

A quick and flavorful summer recipe featuring swordfish fillets pan-seared with cherry tomatoes, capers, garlic, and oregano. The tomatoes are left whole to burst in your mouth, creating a delicious sauce.

Ingredients
9 items- 2 pcsSwordfish2 slices, about 200 g each
- 200 gDatterini Cherry TomatoesCherry tomatoes, left whole
- OreganoDivided: some for soffritto and some for garnish
- CapersTo taste
- 2 pcsGarlicWhole cloves, skin on
- SaltTo taste
- Black PepperFreshly ground, to taste
- Extra Virgin Olive OilFor cooking
- Chili Pepper(optional) — Optional, to taste
Method
- Add extra virgin olive oil to the pan.
- Add 1-2 whole garlic cloves (in their skin).
- Add capers and some of the oregano.
- Sauté the soffritto over heat, tilting the pan to infuse the oil with flavors.
- Place the swordfish slices in the pan.
- Add the whole cherry tomatoes (do not pierce or cut them).
- Season the fish and tomatoes with salt and freshly ground black pepper.
- Cook over high heat until the tomatoes are wilted and the swordfish is cooked through (check by lifting a slice – it should flake easily).
- Remove the garlic cloves.
- Plate the swordfish and tomatoes, pouring the pan juices over the top.
- Garnish with the remaining oregano.
- Optionally, add chili pepper to taste.
