Method

  1. Dry the swordfish steak thoroughly with paper towels. Do not wash it.
  2. Heat a cast iron grill pan over high heat until very hot. Test by holding your hand about 10 cm above the pan; if you can comfortably count to 5, it is ready.
  3. Place the dried swordfish steak on the hot grill. Do not add any oil or salt.
  4. Cook for about 2 minutes on the first side, or until the fish releases naturally from the grill. Do not force it.
  5. Flip the steak using a spatula. Immediately season with a pinch of salt.
  6. Continue cooking the second side for about 2 minutes, until the fish is cooked through and has nice grill marks.
  7. Remove from the grill. Finish with finely chopped chives, a little more salt, freshly ground black pepper, and a drizzle of extra virgin olive oil.
  8. Decorate the plate with whole chive leaves and a few drops of lemon juice (do not squeeze the lemon directly onto the fish; just drop drops around). Serve immediately.
