A traditional Campanian recipe, revised with the addition of smoked pancetta and mozzarella.

Ingredients

- Celerya small piece
- Carrot1 small carrot
- Oniona small portion
- Olive Oila drizzle
- Smoked Pancettaa slice or piece
- 1 pcsBay Leavesbay leaf for infusion, to be removed
- Mixed Pastamixed pasta shapes (e.g., Gragnano)
- Tomato Pasteto taste
- Hot Waterenough to cover the pasta
- Saltto taste
- Black Pepperto taste
- Fiordilatte Mozzarellaa small piece, grated
Method
- Peel the potatoes and cut them into cubes.
- Finely chop celery, carrot, and onion to make a soffritto.
- In a pan, add a drizzle of olive oil and the chopped vegetables; sauté over medium heat.
- Add the smoked pancetta cut into pieces and cook until rendered.
- Add a bay leaf for infusion.
- Add the cubed potatoes and stir well.
- Add the pasta directly into the pan and mix to coat.
- Remove the bay leaf.
- Add hot water to cover everything and bring to a boil.
- Add the tomato concentrate and stir to combine.
- Cook for about 12 minutes or until the pasta is al dente.
- Test the pasta by pressing a piece on a cutting board; it should be creamy.
- Season with salt and pepper to taste.
- Turn off the heat, grate mozzarella over the pasta, and drizzle with a little olive oil; toss to melt.
- Serve immediately.
