Trucker's Pasta

A rich and creamy pasta from Italian trattorias, beloved by truckers for its abundance and flavor. Made with mushrooms, cooked ham, peas, and cream, it's a hearty, satisfying dish.

Ingredients
12 items- 500 gPasta (short shape like rigatoni or penne)Any short pasta works; the chef uses rigatoni.
- 500 gFunghi misti (porcini or champignon)Equal weight to pasta; porcini preferred but champignon work.
- Cooked HamDiced; quantity to taste.
- PeasFrozen or fresh; cook for 10 minutes before adding pasta.
- Cooking CreamFresh liquid cream; enough to coat the pasta.
- Garlic2–3 cloves, minced.
- Onion1 medium onion, finely chopped.
- ParsleyFresh, chopped; for garnish and flavor.
- Parmigiano Reggiano or Grana PadanoGrated; plentiful.
- Extra Virgin Olive OilItalian extra virgin olive oil; used for sautéing and drizzling on bread.
- SaltTo taste, for pasta water and seasoning.
- Black PepperFreshly ground, to taste.
Method
- Dice the cooked ham into small cubes.
- Slice the mushrooms into medium-thick slices.
- Chop the onion finely and mince the garlic.
- Heat extra virgin olive oil in a large pan. Add the garlic and a pinch of parsley, sauté briefly.
- Add the mushrooms to the pan, season with salt, and cook on high heat until they release their juices and start to brown.
- Bring a large pot of salted water to a boil. Add the peas and cook for 10 minutes.
- After 10 minutes, add the pasta to the same boiling water and cook until al dente.
- In the same pan used for mushrooms (remove mushrooms temporarily), add a little pasta cooking water and the chopped onion. Sauté until the onion softens and the water evaporates.
- Add the diced ham and cook until it takes on color.
- Return the cooked mushrooms to the pan. Add the cream and mix well. Let the sauce simmer and thicken slightly.
- Drain the pasta (reserve some cooking water) and transfer it to the pan with the sauce. Add the cooked peas.
- Finish cooking the pasta in the sauce, adding a splash of pasta water if needed to adjust consistency. Adjust salt to taste.
- Remove from heat. Stir in chopped parsley and a generous amount of grated Parmesan or Grana Padano. Toss well.
- Serve immediately, with extra cheese on top if desired.
