A quick and fresh beach sandwich made with just a few ingredients: crusty bread, pesto, ripe tomato, mozzarella, olive oil, and basil. Perfect for a sunny day by the sea.

- Pesto alla GenoveseHomemade or store-bought
- TomatoRipe tomato, sliced
- MozzarellaFresh mozzarella, sliced
- Olive OilExtra virgin olive oil
- Fresh BasilFresh basil leaves
Method
- Cut the bread in half horizontally.
- Spread pesto generously on both cut sides of the bread.
- Slice the tomato into rounds and arrange on the bottom half of the bread.
- Add slices of mozzarella on top of the tomato.
- Drizzle with olive oil and add fresh basil leaves.
- Close the sandwich with the top half of the bread and serve.
