Homemade chicken and spinach burgers, breaded and fried, served in a sandwich with lettuce, tomato, basil, and olive oil. A fun and tasty take on Popeye's favorite.

Ingredients

- 150 gSpinachBoiled and squeezed spinach
- 2 pcsEggBeaten for breading
- FlourFor breading, as needed
- PankoJapanese breadcrumbs, as needed
- Extra Virgin Olive OilFor the mixture and assembly
- Seed OilFor frying, as needed
- Fine SaltFine salt, to taste

- SaladLettuce or mixed salad leaves

Method
- Blend chicken breast and boiled spinach with salt, pepper, and a drizzle of olive oil until a uniform mixture forms.
- Shape the mixture into 4 hamburger patties.
- Freeze the patties for 30 minutes (or until firm) to make them easier to bread.
- Bread each patty: coat first in flour, then in beaten egg, then in panko breadcrumbs.
- Fry the breaded patties in hot seed oil until golden brown and cooked through (about 2-3 minutes per side).
- Assemble the sandwich: on a soft bun, layer lettuce, tomato slices, a pinch of salt, fresh basil leaves, and a drizzle of olive oil. Place the fried spinacina patty on top and close the bun.
