The authentic Valencian paella recipe with chicken, rabbit, and three types of beans, cooked in a single pan for a rich and flavorful dish.

13 items- 200 gBomba Rice
- 500 gChickenPreferably free-range chicken; skin removed
- 400 gRabbit
- 2 pcsPomodori Maturi
- Rosemary2-3 sprigs
- 1 pcsLemonFor serving
- 500 gTris di FagioliMix of flat beans, white beans (Spanish), and cannellini beans; fresh or frozen
- 1 tspSweet PaprikaSweet paprika
- 1 tspTurmericActivate with black pepper
- 2 pcsSaffronTwo sachets; one for color and initial flavor, one for final flavor
- SaltTo taste
- Black PepperTo taste; also needed to activate turmeric
- Extra Virgin Olive OilAs needed
Method
- Prepare the meat: cut chicken and rabbit into pieces, season with salt, pepper, and olive oil.
- Heat olive oil in a paella pan and brown the meat on all sides for about 10 minutes.
- Grate the tomatoes.
- Remove excess fat if necessary.
- Add the three types of beans (flat beans, white beans, cannellini) and stir.
- Make a well in the center, add the grated tomato, and lightly salt. Cook for 4-5 minutes until the tomato water evaporates.
- Mix everything together and cook another 4-5 minutes.
- Add turmeric and sweet paprika, stir to lightly toast.
- Add the first sachet of saffron and mix.
- Add room-temperature water until it partially covers the meat (about 1 cm from the edge) and bring to a simmer.
- Add two sprigs of rosemary and cook on low heat for 10 minutes.
- Remove the rosemary, add the second sachet of saffron, and stir.
- Add the rice in a rain, distributing evenly over the surface. Stir briefly to coat the rice with liquid, then do not stir again.
- Cook without stirring for the time indicated on the rice package (about 18-20 minutes).
- Turn off the heat and let the paella rest for 5 minutes before serving.
- Serve with lemon wedges.
