Orecchiette with Turnip Tops, Sausage, and Pecorino

A warm and hearty pasta dish inspired by the classic Orecchiette con Cime di Rapa, enriched with crumbled sausage, cherry tomatoes, and a creamy pecorino sauce.

Ingredients
10 items- 500 gOrecchiette FrescheFresh orecchiette; strascinati or other short pasta also work
- 500 gBroccoli RabeUse the leaves and tender florets only
- 400 gSausagePork sausage; salamella can be used instead
- 200 gPizzutello TomatoesOr other small, flavorful tomatoes; remove seeds
- 100 gPecorino RomanoAged pecorino; Sardinian or Tuscan pecorino also work
- 1 pcsGarlicOne clove, finely minced or left whole if you prefer a milder flavor
- Fresh Chili PepperTo taste, sliced; adjust amount as desired
- SaltTo taste; be careful because sausage may be salty
- PepperTo taste, freshly ground
- Extra Virgin Olive OilHigh-quality extra virgin olive oil; for cooking and finishing
Method
- Clean the cime di rapa, keeping only the leaves and tender florets; cut into pieces.
- Remove the casing from the sausage and crumble the meat.
- Cut the pomodori pizzutello in half and remove the seeds.
- Mince the garlic clove and slice the fresh chili.
- Heat olive oil in a large pan over low heat. Add the garlic and chili, and sauté gently.
- Add the crumbled sausage and cook until it releases its fat and browns.
- Add the tomatoes and season with salt and pepper. Cook for a few minutes.
- Add the reserved cime di rapa leaves, stir, cover, and cook over low heat for about 5 minutes.
- Meanwhile, cook the orecchiette in salted boiling water until al dente.
- When the sauce is ready, add a ladle of pasta cooking water to the pan and stir to create a creamy emulsion.
- Drain the orecchiette directly into the pan with the sauce. Toss over high heat, adding more pasta water if needed, until the pasta is well coated and creamy.
- Remove from heat, add a drizzle of raw olive oil and grated pecorino romano. Toss gently.
- Let rest for a minute, then serve.
