Sea bream baked in a light broth of cherry tomatoes, white wine, olives, and capers. A classic Italian second course that is simple, aromatic, and perfect for a family meal.

Ingredients

- Extra Virgin Olive Oilextra virgin olive oil, as needed
- 1/2 cupDry White Winedry white wine
- 1/2 cupWaterwater
Method
- Clean the sea bream: remove the innards and gills, cut along the central bone to remove the dark blood line, then cut off all fins with scissors.
- Scale the fish using a peeler, starting from the tail moving toward the head.
- Preheat the oven to 220°C (static).
- Place the two fish in a baking dish, drizzle with extra virgin olive oil, season with salt and white pepper, and turn to coat evenly.
- Mix half a glass of dry white wine and half a glass of water, then pour the mixture around the fish (not directly on top) so that the liquid does not exceed halfway up the fish.
- Cut two garlic cloves in half (skin on) and insert one half into the gill area of each fish.
- Stuff each fish with a generous bunch of fresh parsley.
- Halve 20 cherry tomatoes, season with a pinch of salt, and place some inside the fish alongside the parsley; arrange the rest around the fish.
- Add 20 desalted black olives and 20 desalted capers to the dish.
- Bake in the preheated oven for 35–50 minutes (40 minutes for 700 g fish).
- Once cooked, you may leave the fish in the turned-off oven for up to 30 minutes to keep it moist and allow flavors to intensify.
- Serve the fish with some of the cooking liquid spooned over.
