Sea bream baked in a light broth of cherry tomatoes, white wine, olives, and capers. A classic Italian second course that is simple, aromatic, and perfect for a family meal.

Method

  1. Clean the sea bream: remove the innards and gills, cut along the central bone to remove the dark blood line, then cut off all fins with scissors.
  2. Scale the fish using a peeler, starting from the tail moving toward the head.
  3. Preheat the oven to 220°C (static).
  4. Place the two fish in a baking dish, drizzle with extra virgin olive oil, season with salt and white pepper, and turn to coat evenly.
  5. Mix half a glass of dry white wine and half a glass of water, then pour the mixture around the fish (not directly on top) so that the liquid does not exceed halfway up the fish.
  6. Cut two garlic cloves in half (skin on) and insert one half into the gill area of each fish.
  7. Stuff each fish with a generous bunch of fresh parsley.
  8. Halve 20 cherry tomatoes, season with a pinch of salt, and place some inside the fish alongside the parsley; arrange the rest around the fish.
  9. Add 20 desalted black olives and 20 desalted capers to the dish.
  10. Bake in the preheated oven for 35–50 minutes (40 minutes for 700 g fish).
  11. Once cooked, you may leave the fish in the turned-off oven for up to 30 minutes to keep it moist and allow flavors to intensify.
  12. Serve the fish with some of the cooking liquid spooned over.
