Carrot and Pea Nuggets with Green Mayonnaise

A fun and clever way to get kids to eat their vegetables: crispy baked nuggets made with carrots, potatoes, and whole peas, coated in crushed cornflakes, served with a vibrant green mayonnaise made from pea puree.

Ingredients

- 2 pcsPotatoesBoiled and mashed
- PeasSome left whole for nuggets, remainder for green mayo
- Grated Grana PadanoTo taste
- 1 tbspSoy Sauce
- SaltA pinch
- 2 tbspMayonnaise1 tbsp for nuggets, 1 tbsp for green mayo
- BreadcrumbsAs needed to bind
- Corn FlakesCrushed, enough to coat
- Olive Oil(optional) — For greasing the baking sheet
Method
- Boil the carrots and potatoes until tender, then mash them together.
- Add the peas (leave some whole for texture), grated Grana Padano, soy sauce, salt, and a tablespoon of mayonnaise. Mix well.
- Gradually add breadcrumbs until the mixture is firm enough to shape by hand.
- Take small portions of the mixture, form into small balls, then flatten slightly into nugget shapes.
- Crush the cornflakes and press each nugget into them to coat evenly.
- Place the nuggets on a lightly oiled baking sheet and bake at 180-190°C (350-375°F) for 10 minutes, until golden and heated through.
- Meanwhile, for the green mayonnaise: cook an additional portion of peas until very soft, then puree and pass through a sieve to remove skins.
- Combine the pea puree with mayonnaise in a 2:1 ratio (two parts puree to one part mayonnaise) and emulsify until smooth and green.
- Serve the nuggets hot with the green mayonnaise on the side.
