Mini Apple Pie

Ingredients
9 items- 2Pasta Brisée RolledPre-rolled shortcrust pastry rolls
- 3 pcsFuji Or Reinette ApplesPeeled and diced
- 1 tbspLemon Juice
- 50 gCane SugarBrown sugar
- 25 gGranulated SugarGranulated sugar
- 1 tspGround Cinnamon
- Fine SaltA pinch
- CornstarchTo thicken (cornstarch)
- 1 pcsEggBeaten for egg wash
Method
- Peel and dice the apples into small pieces.
- In a saucepan, combine the apples, lemon juice, brown sugar, granulated sugar, cinnamon, and salt. Cook over medium heat until the apples soften and the mixture comes to a boil.
- Add cornstarch to thicken the filling. Stir well and let cool completely.
- Roll out the pre-rolled shortcrust pastry and cut out circles.
- Place a spoonful of the cooled apple mixture in the center of half of the pastry circles.
- Cover with another pastry circle and press the edges to seal. Use a fork to crimp if desired.
- Brush the tops with beaten egg and sprinkle with a little extra sugar.
- Bake in a preheated oven at 180°C (350°F) until golden brown, about 15-20 minutes.
