A homemade version of the classic Kinder Paradiso snack: a soft sponge cake filled with a creamy whipped cream, condensed milk, and gelatin filling. Easy to make and incredibly delicious.

Ingredients

- 160 gSugarfor the sponge
- 60 gFlour
- 40 gStarchpotato starch
- 5 gBaking Powderbaking powder
- Lemon Zestfrom 1 lemon
- Melted Buttermelted butter, about 50g
- Granulated Sugarfor sprinking after baking
- Whipped Creamwhipped cream, quantity to taste
- Condensed Milkcondensed milk, to taste
- Gelatina scioltadissolved gelatin, about 2 sheets
- Powdered Sugar(optional) — powdered sugar, for dusting
Method
- Break the eggs into a bowl, add the sugar, and whip until light and fluffy.
- Sift together the flour, potato starch, and baking powder, then fold into the egg mixture along with the lemon zest and melted butter.
- Pour the batter into a baking pan lined with parchment paper and level the surface.
- Bake until golden and cooked through, then sprinkle the top with granulated sugar, remove the plastic wrap (if used), and cut the sponge in half horizontally.
- While the sponge cools, prepare the cream: whip the cream, then fold in the condensed milk and dissolved gelatin until smooth.
- To assemble: place one layer of sponge on a work surface, spread the cream evenly, and top with the second sponge layer.
- Trim the edges, cut into rectangles, and dust with powdered sugar before serving.
